This year I am excited because I’m hosting Easter for the first time at my house in PA. Traditionally we celebrate Easter at my husband’s aunt’s house then go to one of my sister’s house in New York. But the time has come where I need to take over the holiday responsibility. I truly don’t mind because I prefer staying local as opposed to traveling. Especially when I serve one of my favorite natural juicy mix cocktail drink from Hot Ruby. I don’t need to worry about who is driving back home to PA.
Sadly, my side of the family won’t be coming because they don’t like to travel to PA. Instead, my husband’s side of the family is coming. We are glad to be doing this because his mom recently had heart surgery and his Aunt has been fighting cancer for over 20 years. We feel it is time for them to relax and for us to take over.
My husband’s family prefer to have brunch because they like eating early. I am baking a glazed ham with my traditional homemade potatoes. In addition, we are including baked ziti, corn on the cob, green beans, potato salad, fresh biscuits, romaine and spinach tossed salad, and deviled eggs. We might even surprise them and serve their favorite traditional Swedish Meatball dish. For dessert, I plan to bake my mouth watering strawberry shortcake and homemade apple pie.
